They say that, if the knife is sharp enough, you don't feel the cut. I reckon it would sting a bit after a while.
Rubbing salt in it helps.

On a serious note...the best way to remove bones from garfish...is by rolling a bottle over the fillets or a rolling pin. I love garfish....we used to get a lot of them when I was living on Hinchinbrook Island, and also when living at Noosa.
